You really need a car to explore the area. We enjoyed Lecce, Ostuni, Monopoli, Polignano (dramatic beach and old town), Alberobello, and Castellana Grotto (on our one wet day). Suggest you avoid Maldive del Salento (sewerage).
Very nice new fish restaurant in walking distance (Dentromare) but quite expensive. Really recommend Al caminetto in Carovigno, good homely food and very reasonable.
