Thessaloniki is great for a short visit in Winter, however, I am sure that is perfect in summer, although for swimming you might need to go farther.
The city is compact. Most of the things are in the same area but with a lot of choice for dining and entertainment. Specially food wise is great, still on the cheap side and good portion with great service, locals mainly.
I would strongly recommend it for a short stay, 3 days are enough.

We were strolling around the Quay, Old port, Green market, White Tower, Byzantine heritage sites until Pasha's Gardens.
We have taken the most beautiful view from above, where people have their houses, towards the Thesalloniki gulf.
We enjoyed our dinner from the top and at the seaside.
Snacks were perfect.

Thessaloniki is a city with many monuments (( Roman, Byzantine, Ottoman), an exceptional Jewish museum, lively markets that can be found only in the Balkans and Turkey, a fantastic sea front with a promenade of around 5klms, an incredible number of restaurants of all types of ethnic food.
Nearby ( about 60klms) is Vergina with the tomb of King Philip father of Alexander the Great, an absolut must see.
Minimum stay should be 3 full days.
My wife and myself come at least once every year.

This is the place to stay! - very clean and cozy hotel. Super frindly, communicative, supportive and helpful staff, always attentive, always smiled, starting form the front desk to the restaurant personnel at breakfast. Breakfast itself super fresh, of good variety, good coffee, fresh juices and omlets. Very clean and modern rooms, well equipped, with all the adds you may need. I used many hotels in Thessaloniki, but now I have my place on the map to stay! :) All the hotel staff - my very best regards!
Lovely city hotel, clean rooms with cute style, super nice staff, great facilities. Each of our 7 rooms had a kitchenette and balcony. Absolutely better than expected for this price. Central location to everything you wanna see/do in Thessaloniki. Yes it is located on a main road, but I don't see how people are surprised by that in the reviews. It's super central and there's a map above, if you're a light sleeper I do suggest bringing some earplugs.
